Thyme

Thyme (Thymus vulgaris) is a wonderful perennial herb. It is native to the Mediterranean and, depending on the variety, grows 2-15 inches tall and 12-24 inches wide. Thyme is a low growing plant often used as a ground cover in containers or in the ground. There are over 50 different varieties of thyme each one with a difference fragrance and flavor. The small fragrant leaves are harvested to use in cooking and the flowers are great for pollinators.

Light: medium to full direct sun and heat; in a sunny window if planted indoors

Water: thyme is very drought tolerant so allow the soil to dry out completely before watering; ensure there is proper drainage to avoid soggy roots and root rot.

Potting Mix: well draining mix

Toxicity: non-toxic to cats and dogs; edible for humans

Fertilizer: very little is needed; fertilize in the spring

Additional Care: plant outdoors when the soil temperature reaches 70 degrees F. Prune only 1/3 of the plant at a time to maintain size and shape as well as to promote growth. Divide or replace the plant every 3-4 years if using for culinary purposes as the older woodier plants loose their flavor. Harvest in the morning just before flowering for maximum flavor and snip off the top 5-6 inches of stem; leave the tougher woody parts. If growing indoors; watch for spider mites in dry weather; especially in the wintertime.
